The Story
Vignoble Com'Autrefois makes a beautiful Verjus from three different grape varietals. The Verjus harvest is made in the first weeks of August when the grapes reach a sugar content of 7-9% (brix) and an acidity between 2.5-2.8 pH. By pressing immature grapes, a very sour juice is produced. This can replace citrus juice in a cocktail for a more unique flavour.

Vignoble Com'Autrefois is a family run business, whose farms are located in the greater Montreal area and are dedicated to organic cultivation of elderberries, blueberries and grapes.Â
- Simply made from unripe grapes
